Getting Creative With Strawberries During Wimbledon

Chocolate and Strawberry Cheesecake
Ingredients: Serves 2-3
- 55g/2oz white or dark chocolate, melted (your choice)
- 45g/2½oz amoretti biscuits, crushed
- 1 tbsp brandy(optional)
- 150ml/¼ pint double cream
- 1 tbsp icing sugar
- 85g/3oz cream cheese
- 1 tsp lime juice
- 5 strawberries, hulled and sliced, plus as many whole strawberries as you like for the top
Method:
- Place a 7.5cm/3in chef's ring on a serving plate.
- In a bowl, mix one tablespoon of melted chocolate with the crushed biscuits and brandy and press into the base of the ring. Transfer to the fridge to chill.
- Whip the double cream and icing sugar together to form soft peaks when the whisk is removed.
- In another bowl, beat the cream cheese until smooth and add the lime juice.
- Gently fold the double cream into the cream cheese mixture, along with the sliced strawberries.
- Fill the ring with some cream mixture and drizzle with some of the melted chocolate. Remove the ring and garnish with the strawberries.
- Repeat the process until the cream mixture and chocolate sauce is used up.
